Holiday Gift Certificates – December Newsletter

We hope everyone is enjoying the holidays. Westover is beginning to look very festive with wreathes and lights sprinkled throughout the property. Now that the temperatures have dropped, it’s starting to feel like winter. Remember that Westover is open all year long, so if you don’t mind chipping the ice off the tip of your rod, we would love to see you. The water stays a consistent temperature (around 52 degrees) and never freezes. We hope you can make it down over your holiday break.

During the winter months (December – February) we do not enforce the 2 night minimum on the weekends. So, let us know or book on-line the best day of the week that works for you. We have several openings over the next couple of weeks too. We look forward to seeing you soon!

Purchasing the 2018 Frequent Fisherman Membership would be an excellent gift for the special fisher person in your life. It pays for itself in just 6 “day trip” fishing trips to Westover. Members can also enjoy 10% off their overnight stay at Westover. If you would rather purchase a day of fishing or just designate a certain amount of money, you can customize a gift certificate. Water levels are still low and clear. Light line, 6X or smaller, and nymphs or streamers should work best. Moving around and changing up the patterns has proven to be the most successful.

The fish don’t seem to be hungrier at any certain time of day, so you can really pick and choose what works best for you. We look forward to hearing what works best for you!

What’s New at Westover Farms?

We hope you are enjoying the great fall weather. The fall foliage at Westover is spectacular this year! We hope you can make it down soon to enjoy the beautiful colors. We want to let you know that we have installed speed bumps throughout the property. There are also new signs stating “Caution Speed Bumps” and “5 mph” too. This is to ensure the safety of our fisherman and families that are staying on site. Please slow down and enjoy the scenery before driving over the speed bumps. Finally, don’t forget that a gift certificate to Westover Farms makes a wonderful gift for that special outdoor person in your life. You can either call us at 573-743-6284 or purchase it online from our website. We are continuing to move forward with the new addition to the conference center, “Dry Creek Center”. Dry Creek Center’s commercial kitchen and dining room will be perfect for larger corporate events and family reunions.

2018 Frequent Fisherman Memberships & Gift Certificates

We have several spots open for you to join our 2018 Frequent Fisherman Program. This is an annual membership that lasts from January – December 2018. There are 4 levels of memberships beginning with our “Young Fisherman” for those that are 18 and younger, our “Regular” membership which is intended for the adult fisherman, the “Social Membership”, for 2 family members who love to fish, and the “Corporate membership” for businesses who like to entertain clients as their guests at Westover Farms. This is a great deal if you are able to come to Westover every month or even every other month. Frequent Fisherman Members also enjoy 10% of lodging. These membership makes a great stocking stuffer. Water Conditions & What They Are Biting On

Water levels are low and clear. In the last several weeks we’ve only gotten about an inch of rain. Fishing is still tough because the fish can see your every move. However, people are catching fish. We recommend using the olive zebra midge, streamers, and egg patterns with light tippet. Let us know what works best for you. We look forward to hearing from you soon!

Recipe of the Month

Judy Ryan’s recipe for Smoked Trout Dip is November’s winner. Judy recommends using this dip at your next holiday party. We look forward to trying your recipes and seeing your pictures soon!

Smoked Trout Dip
5 oz Smoked Trout
2 oz cream cheese
1 Tb mayonnaise
2 green onions (white & pale green parts only)
1 Tb minced fresh dill
Juice & zest of a lemon
1 small pickle diced
Fresh cracked pepper (to taste)
Chopped Vegetables & Crackers for serving
Directions:
Using the paddle attachment in your stand up mixer, combine the smoked trout, cream cheese, fresh dill, green onions, lemon juice and zest, black pepper, diced pickle, and hot sauce. Beat on low until completely combined. Chill in the refrigerator for at least 1 hour before serving. Garnish with dill and serve with your favorite vegetables and cracker.

What’s New at Westover Farms? – September Newsletter

We’ve had a great month with the viewing of the Eclipse and Labor Day Weekend. Above are a couple of pictures that were taken before, during, and after totality of the eclipse. It was such an amazing experience. Watching the steam come off the water because of the temperature dropping and seeing what looked like a sunset was awesome. Everyone wanted to know if the fish did anything crazy, and the answer is no. We did not notice them jumping or swimming erratically. The waters remained calm. We also had a great Labor Day Weekend and met a lot of new fisherman and families. Thanks for trying us out and spending the weekend with us.

Lodging Availability

We have a couple of houses available next weekend (September 22 – 23). There are several events going on in Steelville that weekend too. Jimmy Mesina from” Pocco” and “Loggins & Messina” is performing on Saturday, September 30 at Wildwood Springs Lodge. There is also a photography exhibit at the Gallery Zeke in downtown Steelville. We’ve had a couple of cancellations for lodging in October, so take another look at our calendar and see if your favorite house is available. We look forward to seeing you soon!

 

 

Fly Fishing 101 Class 9/16/17

There are only a couple of spots left for the all-day Fly Fishing 101 class this Saturday. Call us today if you would like to attend. If Saturday doesn’t work for you just let us know and we can schedule a private lesson for you.

 

Water Conditions & What They Are Biting On

Water levels are low and clear. Fishing has been tough because the fish can see your every move. No need to get here at the crack of dawn. The fish don’t seem to be waking up until late morning.

There hasn’t been just one magical fly and you can’t just stand in one spot. Moving around and changing up the patterns has proven to be the most successful.

The best time of day right now is afternoon to early evening. That’s when the fish are feeding off the top and are a little livelier. Soft hackle, crackle backs, tan San Juan’s, white midges or jigs, and tiny caddis are what we’ve been hearing works best. Let us know what works best for you!

Recipe of the Month

George Middendorf is September’s recipe of the month winner. He has a unique recipe that uses a combination of PENZY spices and Maple syrup. Even if you don’t typically like trout, you have to try this. It’s really great.

Middendorf’s Applewood Grilled Trout
1-1.5lb Trout fillet with skin on one side
Penzy’s 3001 BBQ Spice
Penzy’s Smoke Paprika
Penzy’s Lemon Pepper
Shake on Penzy’s Mural of Flavor
1-2 T Organic Maple Syrup
Drizzle Olive Oil (not virgin)
Northwoods Fire
Hardwood Chips & Applewood Chips for the Grill
Directions:
Rub the outside skin with olive oil. Turn the trout over to the meat side and shake each dry spice on the meat to your liking (3001 bbq spice/smoked paprika/lemon pepper/mural of flavor). Rub the spices into the meat. Then drizzle the maple syrup on top of the spices and rub into the meat. Let stand for 20 minutes. Let the grill heat to 300° and then throw the Applewood chips on top of the hardwood chips and cover. Once the flame is down, rub the grill with olive oil to keep the fish from sticking to the grill. Place the trout skin down on the grill and cover with the vents open. Cook for 5 minutes (6 minutes if the fish is over 1.5lbs).
